Possible, but a long day.
More or less 4 hours per way.
It is an old and eroded volcano that blew up 3000 years ago and now has a beautiful turquoise colored lake inside. You can hike around the lake, or inside until you reach the water. You can also hike from this crater lake to the villages near by and stay in small country side hostels or family B&Bs.
Hiking, mountain biking, sightseeing.
Lasso, hacienda or lodge in the Cotopaxi National Park area, B&B near the Quilotoa, and very adventurous with a local family at the Quilotoa village.
